Ingredients

Scale

Main Ingredients

  • 1 tsp olive oil
  • ½ cup diced onion
  • ½ lb ground beef
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • 1 cup (8 oz) tomato sauce
  • 1 cup cooked rice
  • 3 bell peppers, halved
  • ¾ cup mozzarella cheese

Instructions

  1. Heat the oil: Heat the olive oil in a large skillet over medium heat until hot, preparing it for sautéing the onions.
  2. Sauté onions and brown beef: Add the diced onion to the skillet and sauté for 5 minutes until translucent. Then add the ground beef along with salt, black pepper, and garlic powder.
  3. Cook beef mixture: Continue cooking the ground beef until it is thoroughly browned and no longer pink, about 8-10 minutes. Stir frequently to break the meat apart.
  4. Add rice and tomato sauce: Stir in the cooked rice and tomato sauce, combining everything well. Remove the skillet from heat once fully mixed.
  5. Prepare peppers: Place the halved bell peppers into the bottom of the air fryer tray, ensuring they are stable and upright.
  6. Fill peppers: Spoon the beef and rice mixture evenly into each pepper half, filling them generously.
  7. Air fry the peppers: Insert the tray into the air fryer and cook at 360ºF (182ºC) for 17 minutes. This will cook the peppers and heat the filling.
  8. Add cheese topping: After 15 minutes, carefully pull out the tray and sprinkle the mozzarella cheese evenly over the stuffed peppers. Slide the tray back into the air fryer to finish cooking for the remaining 2 minutes.
  9. Serve: Carefully remove the stuffed peppers from the air fryer once cooking is complete. Serve hot and enjoy!

Notes

  • Ensure the bell peppers are halved and seeds removed for even cooking and easy filling.
  • Use pre-cooked rice to reduce total cook time and improve texture.
  • If your air fryer is smaller, cook peppers in batches to avoid overcrowding.
  • You can substitute ground beef with ground turkey or plant-based protein for variations.
  • Leftovers can be refrigerated for up to 3 days and reheated in the air fryer or oven.
