Ingredients

Scale

Feta and Sesame Crust

  • 1 tbsp sesame seeds, toasted
  • 200g block feta
  • 2 tbsp honey, plus extra to serve
  • 1 tsp roughly chopped oregano
  • olive oil, for drizzling

To Serve

  • warmed pitta breads

Instructions

  1. Preheat the oven: Set your oven to 200°C (180°C fan) or gas mark 6 to heat thoroughly while you prepare the feta.
  2. Toast the sesame seeds and coat the feta: Place the sesame seeds in a shallow dish. Brush the entire block of feta cheese all over with 2 tablespoons of honey, ensuring it is evenly coated. Then carefully press the honey-coated feta into the sesame seeds so that it becomes well crusted on all sides.
  3. Prepare the baking dish: Place the sesame-crusted feta into a snug-fitting baking dish. Sprinkle the roughly chopped oregano and a pinch of sea salt evenly over the top. Drizzle olive oil generously around and over the feta to keep it moist during baking.
  4. Bake the feta: Put the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the feta is soft and slightly golden on the edges.
  5. Serve: Remove the feta from the oven and drizzle with a little extra honey for sweetness. Serve immediately with warmed pitta breads to scoop and enjoy the gooey, flavorful feta.

Notes

  • Ensure you use a block of feta rather than crumbled for the best crust and texture.
  • To toast sesame seeds, dry-fry them in a hot pan for 1-2 minutes until golden and fragrant.
  • Adjust honey quantity to taste if you prefer a less sweet or more intense honey flavor.
  • Serving with warmed pitta breads provides a perfect vehicle to scoop up the warm baked feta.
  • For a more herbaceous flavor, fresh oregano can be used instead of dried.
