Ingredients

Scale

For the Gravy

  • 1 pound ground pork sausage
  • 4 ½ cups milk
  • ½ cup flour
  • 3 Tablespoons butter
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

For the Biscuits

  • 2 cans (7.5 ounces each) refrigerator biscuits or use homemade drop biscuit recipe

Instructions

  1. Preheat and Prepare: Heat your oven to 350 degrees Fahrenheit and spray a 13 x 9 inch glass baking dish with cooking spray to prevent sticking.
  2. Cook Sausage: Brown the ground pork sausage in a medium-sized pot over medium heat until fully cooked. Transfer the cooked sausage to the prepared baking dish and blot excess grease from the pot using a paper towel.
  3. Make the Roux: Add butter to the sausage drippings remaining in the pot and melt over medium heat. Stir in the flour, salt, black pepper, and cayenne pepper to form a roux. Cook for 2-3 minutes until the roux begins to brown slightly.
  4. Add Milk and Thicken Gravy: Gradually whisk in the milk a little at a time until the mixture is smooth. Continue cooking over medium-low heat, stirring frequently, until the gravy thickens to the desired consistency, which usually takes a few minutes.
  5. Combine Gravy and Sausage: Pour the thickened gravy over the browned sausage in the baking dish, spreading it evenly.
  6. Prepare Biscuits: Separate the refrigerator biscuits and cut each into fourths, or divide homemade biscuit dough into small portions.
  7. Assemble and Bake: Sprinkle the biscuit pieces evenly on top of the sausage gravy mixture in the baking dish. Bake for 25-30 minutes or until the biscuits turn golden brown and cooked through.
  8. Serve: Remove from oven and serve the casserole warm for a comforting and delicious breakfast or brunch treat.
