Delicious and hearty Breakfast Rolls featuring a savory blend of scrambled eggs, sausage, bacon, cream cheese, and cheddar cheese wrapped in flaky crescent dough, perfect for a satisfying morning meal or brunch.

Ingredients

Scale

Egg Mixture

  • 4 eggs
  • 2 tablespoons red bell pepper, finely diced
  • 1 tablespoon milk
  • 1/4 teaspoon black pepper

Dough

  • 2 (8-ounce) cans crescent dough sheets

Fillings

  • 1/3 cup whipped chive and onion cream cheese
  • 8 ounces ground breakfast sausage, cooked
  • 4 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (177°C) and lightly grease a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Mix Eggs and Vegetables: In a mixing bowl, whisk together the eggs, finely diced red bell pepper, milk, and black pepper until fully combined.
  3. Cook Eggs: Scramble the egg mixture over medium heat on the stovetop until just set, then remove from heat and let cool slightly to prevent the dough from becoming soggy.
  4. Prepare Crescent Dough: Open the two cans of crescent dough and unroll the sheets onto a flat surface. Pinch the long edges together to form one large rectangular sheet of dough.
  5. Spread Cream Cheese: Evenly spread the whipped chive and onion cream cheese over the entire surface of the dough rectangle.
  6. Add Fillings: Top the cream cheese layer with the cooled scrambled eggs, cooked ground breakfast sausage, crumbled bacon, and shredded cheddar cheese, distributing evenly.
  7. Roll Dough: Carefully roll the dough tightly from one edge into a log, ensuring the filling stays inside.
  8. Slice Rolls: Using a serrated knife, cut the rolled dough into 12 even slices to form individual breakfast rolls.
  9. Arrange and Bake: Place the rolls cut side up into the prepared baking pan, leaving a little space between each. Bake in the preheated oven for 24-26 minutes or until the rolls are golden brown on top and cooked through.
  10. Serve: Remove from the oven and allow the rolls to cool slightly before serving warm for a delicious breakfast or brunch treat.

Notes

  • You can substitute the breakfast sausage with turkey sausage for a leaner option.
  • For extra flavor, add chopped fresh herbs like parsley or chives to the egg mixture.
  • Make sure the cooked eggs are cooled before spreading to avoid soggy dough.
  • These rolls can be prepared ahead and reheated in the oven for a quick breakfast.
  • If crescent dough sheets are unavailable, puff pastry can be used as an alternative.
