Filling
- 1 cup Medjool dates (about 13 dates)
- ⅓ cup sunflower seed butter
- 1 tsp vanilla extract
- ⅓ cup protein powder (chocolate or unflavored preferred)
- ¼ cup cocoa powder
- Pinch of salt
Coating (Optional)
- ½ cup dark chocolate
- ½ tsp coconut oil
- Prepare Dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes. This softens the dates, making them easier to blend and improves the texture of the filling.
- Blend Filling Base: Drain the water from the dates and place them in a food processor along with the sunflower seed butter and vanilla extract. Blend until the mixture becomes thick and sticky, resembling a caramel consistency.
- Add Remaining Filling Ingredients: Add the protein powder, cocoa powder, and a pinch of salt into the food processor. Blend again until all ingredients are well combined and the mixture is smooth, stopping to scrape down the sides as needed.
- Form Balls: Using a tablespoon measure or your hands, scoop the mixture and roll it into bite-sized balls, approximately 1 tablespoon each.
- Chill the Bites: Place the balls on a lined baking sheet and freeze them for at least 30 minutes to firm up, which will facilitate coating.
- Melt Chocolate Coating: In a small microwavable dish, combine the dark chocolate and coconut oil. Melt in 20-30 second intervals on high, stirring well between each interval until smooth and fully melted.
- Coat the Bites: Dip each chilled ball into the melted chocolate to fully coat it, then place back on the lined baking sheet to set. Allow the chocolate to harden at room temperature or refrigerate for quicker setting.
