Ingredients

Scale

Chicken and Vegetables

  • 1.5 lbs cooked chicken, shredded
  • 5 cups riced cauliflower (raw)

Cheeses and Sauces

  • 8 oz cream cheese, room temperature
  • 2 cups cheddar cheese, shredded (divided)
  • 3/4 cup buffalo sauce (1/2 cup + 1/4 cup)

Garnish

  • Parsley, chopped, for garnish

Instructions

  1. Preheat the oven: Preheat your oven to 375°F and prepare a 9×13″ casserole dish by lightly greasing it or using non-stick spray to prevent sticking.
  2. Mix ingredients: In a large bowl, combine the shredded cooked chicken, raw riced cauliflower, 1/2 cup buffalo sauce, cream cheese, and 1 cup of shredded cheddar cheese. Stir the mixture thoroughly until it forms a thick, cohesive mixture.
  3. Transfer to casserole dish: Spread the thick mixture evenly into the prepared casserole dish, leveling the surface with a spatula for even cooking.
  4. Add cheese topping: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the mixture in the casserole dish.
  5. Bake covered: Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes. This will allow the flavors to meld and the mixture to heat through.
  6. Bake uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is fully melted, bubbly, and slightly golden.
  7. Garnish and serve: Remove the casserole from the oven and garnish with extra buffalo sauce drizzled on top and chopped parsley. Serve immediately while hot and enjoy!

Notes

  • For an extra spicy kick, add more buffalo sauce or pepper flakes to taste.
  • Use freshly riced cauliflower for the best texture or frozen if pressed and drained thoroughly.
  • You can substitute cooked rotisserie chicken for convenience and enhanced flavor.
  • To make it lower fat, use reduced-fat cream cheese and cheddar cheese alternatives.
  • This casserole reheats well in the oven or microwave for leftovers.
