Cheese Mixture

Dough & Seasoning

  • 1.25 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 4 tablespoons cold water
  • 1 tablespoon everything bagel seasoning or Italian seasoning

Instructions

  1. Mix Cheeses and Butter: Place the unsalted butter, shredded sharp cheddar, and pecorino romano cheeses into the mixing bowl of a stand mixer. Using a stand or electric mixer, combine on medium/high speed for 5-6 minutes until the mixture becomes smooth and fully integrated.
  2. Combine Flour and Salt: Whisk the kosher salt into the all-purpose flour thoroughly. Gradually add this flour mixture to the cheese and butter bowl while mixing on low speed. The mixture will start to form a dry crumble.
  3. Add Cold Water: Slowly add cold water by teaspoons into the bowl while mixing. Continue until a cohesive dough forms.
  4. Form and Chill Dough: Divide the dough into two balls, then flatten each into a disk shape. Wrap the disks tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
  5. Preheat Oven: When ready, remove dough from fridge and preheat the oven to 375°F (190°C).
  6. Roll Out Dough: Place a piece of parchment paper on your counter and roll each dough disk out into a large rectangle less than 1/8 inch thick. Ensure the dough is very thin for crisp crackers.
  7. Add Seasoning: Sprinkle your chosen seasoning generously over the rolled dough. Gently roll the seasoning into the dough using your rolling pin.
