Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Toppings and Fillings

  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Spread

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

For Grilling

  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked and no longer pink inside. Remove from skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and prepare your choice of cheese slices. Set aside for assembly.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard evenly on each slice of bread to add flavor and moisture to the sandwich.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado slices, and cheese. Add several slices of red onion and tomato on top. Cap each sandwich with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches in the pan, cooking for 3-4 minutes per side until the bread is golden brown and the cheese has melted. Press gently with a spatula to help the cheese melt evenly.
  6. Serve: Remove the sandwiches from the skillet and let them cool slightly for about a minute before slicing in half. Serve warm for the best flavor and texture.

Notes

  • You can substitute chicken breasts with leftover roasted chicken for quicker assembly.
  • Choose your favorite cheese, but Swiss, cheddar, or provolone melt best in this sandwich.
  • Use a sturdy bread like sourdough or ciabatta to hold all the fillings without becoming soggy.
  • Adjust seasoning on the chicken according to your preference—adding herbs like thyme or paprika works well.
  • For a spicy kick, add some sliced jalapeños or a dash of hot sauce to the sandwich before grilling.
