Ingredients

Scale

Chicken and Seasonings

  • 4 chicken fillets (about 1.5 lbs or 680 g)
  • Salt, to taste
  • Pepper, to taste

Sauce

  • 4 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons olive oil

Garnish & Side

  • Fresh parsley, chopped, for garnish
  • 1 bag fries (frozen or homemade, about 32 oz or 900 g)

Instructions

  1. Prepare the fries: Cook the fries according to the package instructions if using frozen, or bake homemade fries in a preheated oven at 425°F (220°C) for 30-35 minutes until golden and crispy.
  2. Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken fillets generously with salt and pepper. Place them in the skillet and cook for 6-7 minutes on each side until the chicken is golden brown and cooked through.
  3. Sauté the garlic: Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Make the sauce: Pour the heavy cream into the skillet with the garlic and bring it to a gentle simmer. Stir in the grated Parmesan cheese and red pepper flakes, cooking for 2-3 minutes until the sauce thickens slightly and becomes creamy.
  5. Combine chicken and sauce: Return the cooked chicken fillets to the skillet. Spoon the creamy sauce over the chicken, and let everything simmer together for an additional 2-3 minutes to meld the flavors.
  6. Serve: Plate the chicken fillets and spoon extra sauce on top. Garnish with chopped fresh parsley and serve alongside the prepared fries for a comforting and flavorful meal.

Notes

  • Adjust the amount of red pepper flakes to control the spiciness of the sauce.
  • Use freshly grated Parmesan for the best flavor and texture in the sauce.
  • For a lighter version, substitute heavy cream with half-and-half or a blend of milk and cream.
  • If using homemade fries, soak cut potatoes in water for at least 30 minutes beforehand to remove excess starch and achieve crispier fries.
  • Ensure the chicken is cooked to an internal temperature of 165°F (75°C) for food safety.
