  • 1 tbsp chilli flakes
  • 500g radishes, leaves removed, smashed with the flat edge of a knife (or halved/quartered if preferred)
  • 1/2 lemon, juiced

Instructions

  1. Heat the butter and chilli flakes: Place a small frying pan over medium heat and add the unsalted butter along with the chilli flakes. Heat until the butter melts and begins to foam and turn a golden brown color, which will infuse the chilli flavor into the butter and bring a nutty aroma.
  2. Add and cook the radishes: Add the smashed radishes to the browned chilli butter and stir well to coat them evenly. Reduce the heat slightly if needed and cook the radishes, turning them often, until they become softened and tender. This should take about 10 to 15 minutes.
  3. Sizzle with lemon juice and season: Increase the heat to allow the pan to get hotter. Pour in the lemon juice, letting it sizzle into the pan to add brightness and a little acidity to balance the rich butter. Season to taste with salt and pepper, then remove from heat and serve immediately.
