Instructions

  1. Preheat Oven and Roast Garlic: Preheat your oven to 200°C (400°F). Cut the top off the garlic head to expose the cloves, wrap it in aluminum foil, and bake for 45-50 minutes until the cloves become very soft. Allow to cool.
  2. Prepare Potatoes: While roasting the garlic, boil the peeled and quartered potatoes in salted water until very tender. Drain and then steam dry the potatoes to remove excess moisture.
  3. Make Mashed Potatoes: Squeeze the roasted garlic cloves out of their skins into a small bowl and mash them with a fork. Return the dry potatoes to the pot, add hot milk, and start mashing with a potato masher until mostly smooth. Add butter and continue mashing. Stir in half of the mashed roasted garlic, then gradually add more garlic to taste. Season with salt. Fold in the fresh parsley and dill gently with a spatula. Keep warm until serving.
  4. Prepare Chicken Coating: In a shallow bowl, combine flour, salt, black pepper, paprika, and garlic powder. In another bowl, whisk together eggs and buttermilk.
  5. Coat Chicken Pieces: Dip each chicken piece first into the egg mixture, then dredge thoroughly in the seasoned flour mixture, ensuring an even coating. For extra crispiness, repeat the egg and flour dredging one more time.
