Wet Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
Dry Ingredients
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
Additional Mix-ins
- 2 cups old-fashioned rolled oats
- 1 cup semisweet chocolate chips
- 1 cup shredded coconut
- 1 cup chopped nuts (walnuts or pecans)
- Preheat the oven: Set the oven to 350°F (175°C) and line baking sheets with parchment paper to prepare for baking.
- Cream butter and sugars: In a large bowl, beat the softened butter with granulated and brown sugars for 3–4 minutes until the mixture is light and fluffy.
- Add eggs and vanilla: Incorporate the eggs one at a time, beating well after each addition, then mix in the vanilla extract thoroughly.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt to ensure even distribution.
- Mix dry into wet: Gradually add the dry ingredients to the wet mixture and mix until just combined, avoiding overmixing.
- Fold in mix-ins: Stir in the rolled oats, chocolate chips, shredded coconut, and chopped nuts until evenly distributed.
- Portion dough: Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow spreading.
- Bake cookies: Place baking sheets in the oven and bake for 10–12 minutes until the edges turn golden brown and the centers remain soft.
- Cool cookies: Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Notes
- Ensure butter is softened, not melted, for the best texture.
- You can substitute nuts with your favorite variety or omit for nut allergies.
- For chewier cookies, slightly underbake and cool on the sheet.
- Store cookies in an airtight container to keep fresh for up to a week.
- These cookies freeze well; thaw at room temperature before serving.
