Instructions

  1. Heat and Sauté: Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic and cook for an additional 30 seconds, stirring frequently to prevent burning.
  2. Add Broth and Seasonings: Pour in the chicken broth and lime juice into the saucepan and stir to combine. Add the mashed avocados, salt, and cumin. Stir gently until all ingredients are well incorporated.
  3. Simmer the Soup: Increase the heat to high and bring the mixture to a boil, stirring occasionally to prevent sticking. Once boiling, reduce the heat to low and let the soup simmer gently for 5 minutes.
  4. Puree the Soup: Transfer the hot soup mixture to a blender. Depending on your blender size, puree half the soup at a time for smoothness. Alternatively, you can use an immersion blender directly in the pot to puree until smooth and creamy.
