Ingredients

Scale

Salmon

  • 4 salmon fillets (about 6 oz each, skinless)
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil

Sauce

  • 3 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (chopped, preferably in oil)
  • 1 cup heavy cream
  • 1 cup fresh spinach (packed)
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Fresh basil (for garnish, optional)

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat until hot, then add the salmon fillets.
  2. Cook the Salmon: Sear the salmon for 4-5 minutes on one side until golden brown. Carefully flip and cook for another 3-4 minutes until cooked through and flaky. Remove salmon from skillet and set aside.
  3. Make the Creamy Sauce: Using the same skillet, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in fresh spinach and let it wilt. Add Italian seasoning and grated Parmesan cheese, stirring until the sauce thickens slightly. Season with additional salt and pepper as needed.
  4. Combine: Return the cooked salmon to the skillet and spoon the creamy sauce over the top. Let it simmer together for 2-3 minutes to heat through and meld flavors.
  5. Serve: Garnish with fresh basil if desired. Serve warm alongside your choice of sides such as rice, pasta, or a fresh salad for a complete meal.

Notes

  • Ensure the skillet is hot before adding salmon for a nice sear.
  • You can substitute sun-dried tomatoes in oil with dry-packed ones soaked in warm water but expect a less intense flavor.
  • Use fresh spinach for best texture and flavor; baby spinach works well too.
  • Adjust seasoning at the end to suit your taste preferences.
  • This dish pairs beautifully with crusty bread to soak up the creamy sauce.
