Instructions

  1. Preheat the oven. Preheat your oven to 350°F (175°C) to prepare for baking the quiche.
  2. Sauté the vegetables. Heat the canola oil in a large skillet over medium heat. Add the chopped onions and sliced mushrooms and cook until tender and lightly browned. Then add the thawed, well-drained chopped spinach and the finely chopped fully cooked ham to the skillet. Cook until all excess moisture has evaporated and the mixture is relatively dry. Remove from heat and let it cool slightly.
  3. Prepare the egg and cheese mixture. In a large mixing bowl, beat the 5 large eggs until well combined. Stir in the 3 cups of shredded Muenster or Monterey Jack cheese and the 1/8 teaspoon of pepper.
  4. Combine ingredients. Add the cooled vegetable and ham mixture to the egg and cheese blend. Stir gently until all components are evenly incorporated.
  5. Pour into greased dish. Grease a 9-inch pie plate or quiche dish with room-temperature butter, cooking spray, or canola oil. Pour the combined mixture evenly into the prepared dish.
  6. Bake the quiche. Place the quiche in the preheated oven and bake for 40 to 45 minutes. The quiche is done when a knife inserted into the center comes out clean and the top is lightly golden.
  7. Cool and serve. Remove from the oven and let the quiche cool for about 10 minutes before slicing and serving. This helps it set for clean slices.
