Instructions

  1. Prepare the Puff Pastry: Roll out one sheet of puff pastry on a sheet of parchment paper, lightly rolling to even thickness. Use a 9-inch round pan or plate as a guide and cut around it with a paring knife to form a perfect circle. Set aside scraps for another use or discard.
  2. Spread the Cookie Butter: Using an offset spatula, evenly spread 2/3 cup of cookie butter over the pastry circle, leaving a 1/4-inch border around the edges. If the cookie butter is too thick, microwave for 10-20 seconds to soften for easier spreading.
  3. Layer and Seal the Pastry: Roll out the second puff pastry sheet and cut it into a 9-inch circle as before. Carefully place it on top of the cookie butter layer and gently press down around the edges to seal the two layers together.
  4. Cut and Shape the Pastry: Place a small pinch bowl upside down in the center of the pastry as a guide. Cut the pastry into quarters, cutting only up to the edge of the bowl. Further divide each quarter into four strips, resulting in 16 total strips. Take two adjacent strips and twist them away from each other three times, then pinch the ends together firmly to form a pointed snowflake shape. Repeat for all strips.
  5. Apply Egg Wash and Bake: Whisk together 1 large egg and 1 tablespoon of heavy cream. Brush this egg wash over the entire top of the pastry. Preheat the oven to 375°F (190°C). Transfer the pastry to the oven and bake for 35-40 minutes until golden brown and puffed, allowing some filling to ooze out if it happens.
