Meat and Aromatics

- 1 large onion, diced

- Cook Meat and Onions: In a very large skillet, cook and crumble the ground meat with diced onions and black pepper over medium-high heat until the meat is fully cooked. Do not drain the fat as it adds flavor. Ensure the skillet is large enough to hold all ingredients; otherwise, divide into two skillets.
- Prep Vegetables: While the meat cooks, cut the cabbage in half, remove the core, then slice each half into thin ribbons. Peel the carrots with a vegetable peeler and either dice them small or shave them into thin slices. Set vegetables aside.
- Add Vegetables to Meat: Add the sliced cabbage, prepared carrots, and minced garlic to the cooked meat in the skillet. Cook and stir everything together over medium-high heat for about 5 minutes to soften the vegetables slightly.
- Mix Sauce: In a small bowl, combine grated fresh ginger, sesame oil, and soy sauce. Stir this sauce mixture into the skillet with meat and vegetables, evenly coating all ingredients.
- Simmer Until Tender: Reduce the heat to medium and continue cooking the stir-fry for another 5-10 minutes, stirring occasionally, until the cabbage becomes tender but still retains slight crunch.
