Ingredients

Scale

For the Chicken

  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into large chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder

For the Potatoes

  • 1 ½ lbs baby potatoes, halved (or Yukon Gold potatoes, chopped)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried parsley

For the Garlic Parmesan Finish

  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • ¾ cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prepare it for the chicken and potatoes.
  2. Season the chicken: In a bowl, toss the chicken pieces with olive oil, salt, black pepper, paprika, Italian seasoning, and garlic powder until evenly coated. Set aside to let the flavors meld.
  3. Prepare the potatoes: In a separate bowl, toss the halved baby potatoes with olive oil, salt, black pepper, paprika, and dried parsley ensuring all potatoes are well coated.
  4. Assemble in baking dish: Spread the seasoned potatoes evenly in the prepared baking dish. Nestle the seasoned chicken chunks among the potatoes, distributing them evenly.
  5. Bake initially: Place the baking dish uncovered in the preheated oven and bake for 30 minutes. Halfway through baking, stir the potatoes gently to ensure even cooking.
  6. Prepare garlic butter: While the chicken and potatoes are baking, combine the melted unsalted butter with minced garlic in a small bowl.
  7. Add garlic butter and Parmesan: Remove the baking dish from the oven and drizzle the garlic butter mixture evenly over the cooked chicken and potatoes. Then sprinkle the freshly grated Parmesan cheese generously over the top.
  8. Finish baking: Return the dish to the oven and bake for an additional 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender when pierced with a fork.
  9. Garnish and serve: Optionally sprinkle chopped fresh parsley over the dish for a pop of color and additional flavor. Serve the garlic Parmesan chicken and potatoes hot for a delicious meal.

Notes

  • You can use either chicken breasts or thighs based on your preference for juiciness or leanness.
  • If baby potatoes aren’t available, Yukon Gold or small red potatoes are a great substitute.
  • Be sure to stir the potatoes halfway through baking to ensure even roasting and prevent burning.
  • Use freshly grated Parmesan cheese for the best flavor and texture; pre-grated cheese can sometimes be powdery.
  • Check the chicken’s internal temperature with a meat thermometer to ensure it’s safely cooked through.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
