This Garlic Parmesan Focaccia Bread is a savory and easy-to-make Italian flatbread featuring a crispy golden crust, aromatic garlic oil, and a generous topping of Parmesan cheese and fresh herbs. Perfect as a side dish or snack, it’s tender on the inside with flavorful dimples infused with garlic and olive oil.

Ingredients

Scale

For the Dough:

  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 2 tablespoons olive oil
  • 1 ¾ cups warm water (about 110°F)

For the Garlic Parmesan Topping:

  • 3 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • ½ teaspoon salt
  • ½ cup grated Parmesan cheese
  • 1 tablespoon fresh rosemary or thyme (optional)

To Finish:

  • Additional olive oil for greasing
  • Flaky sea salt for sprinkling
  • Fresh parsley or herbs for garnish (optional)

Instructions

  1. Make the Dough: In a large bowl, combine the flour, salt, and instant yeast. Stir in the olive oil and warm water. Mix until a sticky dough forms. No kneading required—cover with plastic wrap and let it rise at room temperature for 1 to 2 hours until doubled in size.
  2. Prepare the Pan: Generously grease a 9×13-inch baking dish or sheet pan with olive oil. Transfer the risen dough to the pan and gently stretch it out to the edges. Let it rest for another 30 minutes while preparing the topping.
  3. Make the Garlic Oil: In a small saucepan, heat 3 tablespoons olive oil over low heat. Add the minced garlic and ½ teaspoon salt. Cook just until fragrant without browning the garlic. Remove from heat and set aside.
  4. Dimple the Dough: Use your fingers to press deep dimples all over the surface of the dough. Drizzle the garlic oil evenly over the top. Sprinkle grated Parmesan cheese, fresh rosemary or thyme if using, and a pinch of flaky sea salt over the surface.
  5. Bake the Focaccia: Preheat the oven to 425°F (220°C). Bake the focaccia for 20 to 25 minutes, or until the top is golden brown and crispy. Remove from oven and let cool for 10 minutes before slicing.
  6. Serve and Enjoy: Cut the focaccia into squares or strips. Serve warm, garnished with fresh parsley or herbs if desired. Perfect as a snack or accompaniment to meals.

Notes

  • Do not brown the garlic when making the garlic oil; cook gently to avoid bitterness.
  • Allowing the dough to rise fully ensures a soft, airy texture inside the focaccia.
  • Using instant yeast speeds up the rising process but active dry yeast can be substituted with a longer proof time.
  • Fresh herbs like rosemary or thyme add lovely aroma but can be omitted or substituted.
  • Store leftovers wrapped tightly at room temperature for up to 2 days; reheat to refresh the texture.
