Ingredients

Scale

Base Ingredients

  • 12 tablespoons olive oil (or ghee)
  • 1 onion, diced
  • 1 tablespoon fresh ginger, grated or finely minced
  • 45 garlic cloves, grated or finely minced
  • 12 teaspoons turmeric powder (or 23 teaspoons fresh turmeric, finely grated, or a combination)
  • ¼ teaspoon mustard seed (optional)
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ¾1 teaspoon salt
  • 4 cups water
  • 4 cups vegetable or chicken stock
  • ¼ teaspoon cayenne pepper, or more to taste
  • Squeeze of lime juice or lemon juice (to taste) or 1-2 teaspoons apple cider vinegar (to taste)

Instructions

  1. Sauté Aromatics: In a large heavy-bottomed pot or Dutch oven, heat 1-2 tablespoons of olive oil (or ghee) over medium heat. Add the diced onion and sauté for about 5 minutes until the onion is fragrant and golden brown.
  2. Add Ginger, Garlic, and Turmeric: Add the grated or minced ginger, garlic, and fresh turmeric to the pot. Sauté for 2-3 minutes, until the garlic is fragrant and golden, stirring frequently to prevent burning.
  3. Toast Spices: Add the mustard seeds (if using), turmeric powder, cumin, and coriander. Stir and sauté for another 1-2 minutes to release the flavors of the spices.
  4. Add Liquids and Seasonings: Pour in 4 cups of water and 4 cups of vegetable or chicken stock. Add the salt and cayenne pepper. Stir well and bring the mixture to a gentle simmer over medium heat.
  5. Finish with Acid: Once simmering, add a squeeze of lime or lemon juice, or 1-2 teaspoons of apple cider vinegar to brighten the soup’s flavor. Taste and adjust salt, citrus, and spice levels according to your preference.
  6. Customize and Store: Use this flavorful broth as a base to add vegetables, cooked or dried pasta (noting pasta will expand 2-3 times), beans, or proteins of your choice. Be mindful of cooking times for the ingredients you add. You may also refrigerate or freeze this broth for later use.

Notes

  • Turmeric can be used fresh, powdered, or a combination of both depending on availability and preference.
  • Mustard seed is optional but adds a slight pungency and texture if included.
  • Adjust cayenne pepper to control the level of heat in the soup.
  • When adding uncooked pasta or beans, remember they will significantly increase in volume after cooking; add moderately to avoid overcrowding the soup.
  • This broth is versatile and can be adapted by adding your favorite vegetables, proteins, or grains.
