Base Ingredients

- Sauté Aromatics: In a large heavy-bottomed pot or Dutch oven, heat 1-2 tablespoons of olive oil (or ghee) over medium heat. Add the diced onion and sauté for about 5 minutes until the onion is fragrant and golden brown.
- Add Ginger, Garlic, and Turmeric: Add the grated or minced ginger, garlic, and fresh turmeric to the pot. Sauté for 2-3 minutes, until the garlic is fragrant and golden, stirring frequently to prevent burning.
- Toast Spices: Add the mustard seeds (if using), turmeric powder, cumin, and coriander. Stir and sauté for another 1-2 minutes to release the flavors of the spices.
- Add Liquids and Seasonings: Pour in 4 cups of water and 4 cups of vegetable or chicken stock. Add the salt and cayenne pepper. Stir well and bring the mixture to a gentle simmer over medium heat.
- Finish with Acid: Once simmering, add a squeeze of lime or lemon juice, or 1-2 teaspoons of apple cider vinegar to brighten the soup’s flavor. Taste and adjust salt, citrus, and spice levels according to your preference.
