Ingredients

Scale

Truffle Base

  • 300g (about 2 ½ cups) gingerbread cookies, crushed into fine crumbs
  • 120g (4 oz or half a block) cream cheese, softened
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 tsp vanilla extract

Coating

  • 250g (8 oz) white chocolate chips or melting wafers

Optional Toppings

  • Festive sprinkles
  • Crushed gingerbread crumbs
  • Dusting of cinnamon

Instructions

  1. Crush the Cookies: Place the gingerbread cookies into a food processor and pulse until they are finely ground into crumbs. Alternatively, place them inside a sealed zip-top bag and crush them using a rolling pin until a fine crumb texture is achieved.
  2. Make the Dough: In a large mixing bowl, combine the crushed gingerbread cookies with the softened cream cheese, ground cinnamon, nutmeg, cloves, and vanilla extract. Stir thoroughly until all ingredients are incorporated and a soft, sticky dough forms. Mixing with clean hands can help in achieving a uniform texture.
  3. Roll Into Balls: Using about one tablespoon of the dough at a time, roll the mixture between your palms to form smooth balls. Arrange each truffle on a parchment-lined baking sheet. Continue rolling until you have formed 20 to 24 truffles.
  4. Chill the Truffles: Place the tray with the truffles in the refrigerator for at least 30 minutes or alternatively freeze for 15 minutes. This chilling step firms up the dough, making it easier to coat with chocolate.
  5. Melt and Dip: Place the white chocolate chips or melting wafers in a microwave-safe bowl. Heat in 30-second intervals, stirring between each session until the chocolate is fully melted and smooth. Using a fork, dip each chilled truffle into the melted chocolate, allowing excess chocolate to drip off. Return the coated truffles to the parchment-lined tray. While the coating is still wet, sprinkle optional toppings such as festive sprinkles or crushed gingerbread crumbs.
  6. Let Set: Allow the chocolate coating to set completely at room temperature or speed up setting by placing the tray back into the refrigerator. Once set, the truffles are ready to enjoy.

Notes

  • Ensure the cream cheese is softened to room temperature for easiest mixing.
  • Use parchment paper to prevent truffles from sticking during chilling and setting.
  • Storage: Keep truffles refrigerated in an airtight container for up to 1 week.
  • For variation, try dipping truffles in dark or milk chocolate instead of white chocolate.
  • Optional toppings add a festive touch and additional texture.
