  • ¾ cup (90g) oat flour (gluten free if necessary and measured like this)
  • ¼ cup (54g) roughly chopped dark chocolate (see Notes)

Instructions

  1. Prepare baking surface: Place a sheet of wax paper or parchment paper on a baking tray to prevent sticking and for easy handling of the truffles.
  2. Mix base ingredients: In a medium bowl, stir together the pumpkin purée, homemade pumpkin spice, salt, and liquid stevia until well combined. Add the oat flour and gently stir until just incorporated, avoiding overmixing to maintain a tender texture.
  3. Form truffles: Working with a small amount of the mixture at a time, roll into bite-sized spheres. If the mixture sticks to your fingers, rub a little neutral-tasting oil on your palms to ease the rolling process. Place each formed sphere onto the prepared baking sheet.
  4. Melt dark chocolate: Place the chopped dark chocolate in a microwave-safe bowl. Microwave on HIGH for 30 seconds, then stir for 1 minute. Continue heating in 10-second intervals, stirring for 1 minute between each, until the chocolate is completely melted and smooth. Keep the chocolate warm while assembling the truffles for ease of dipping.
  5. Dip truffles in chocolate: Using two forks, carefully dip each pumpkin sphere into the melted chocolate, allowing excess chocolate to drip off by rocking it between the forks. Place the dipped truffle back onto the wax paper lined tray. If desired, sprinkle flaky sea salt on top of each dipped truffle for an enhanced flavor contrast.
  6. Set truffles: After all 24 truffles have been coated in chocolate, transfer them to the freezer for 5-10 minutes or the refrigerator for 15-20 minutes until the chocolate hardens and sets properly.
