Instructions

  1. Cook the Rice: Prepare 2 cups of white or brown rice according to package instructions. For added flavor, cook the rice in chicken or vegetable broth or prepare cilantro lime rice as an alternative.
  2. Cook the Turkey: Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add 1 pound lean ground turkey and cook, breaking it apart with a spoon, for 5-6 minutes until browned. Stir in 1 teaspoon chili powder, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, salt, and black pepper to taste. Add 2-3 tablespoons water, reduce heat to low, and let the turkey simmer for 8-10 minutes, stirring occasionally to develop the flavors.
  3. Warm Corn and Beans: In a small saucepan over low heat, warm 1 cup corn. If using, add 1 cup rinsed and drained black beans to the pan with the corn and season with a pinch of salt. Stir gently until heated through.
  4. Assemble the Taco Bowls: Start by layering cooked rice and chopped romaine or iceberg lettuce at the bottom of each bowl. Top with the seasoned turkey mixture, warm corn and black beans, sliced avocado or guacamole, 1/2 cup salsa, and 1/3 cup light Greek yogurt. Garnish with fresh chopped cilantro and serve with lime wedges to squeeze over the bowl.
