Filling
- 2 cups ground walnuts, toasted
- 1/4 cup sugar
- 2 teaspoons ground cinnamon
Phyllo Dough and Butter
- 12 sheets frozen phyllo dough, thawed
- 1/2 cup butter, melted
Syrup
- 1/2 cup honey
- 1/2 cup sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- Preheat and Prepare Filling: Preheat your oven to 350°F (175°C). In a bowl, combine the toasted ground walnuts, sugar, and ground cinnamon until evenly mixed.
- Assemble the Roll-Ups: Lay one sheet of phyllo dough onto a 15×12-inch piece of waxed paper and brush it generously with melted butter. Place a second sheet on top and brush with butter as well. Keep the remaining phyllo covered with a damp towel to prevent drying. Evenly sprinkle 1/4 cup of the walnut mixture over the layered phyllo. Using the waxed paper to assist, roll the layered phyllo tightly from the long side like a jelly roll, removing the paper as you roll. Slice this roll into 4 smaller rolls and transfer them to a greased 13×9-inch baking dish. Repeat this process with the remaining phyllo sheets and walnut mixture, dividing the filling into 1/4 cup portions.
- Bake the Roll-Ups: Place the baking dish in the preheated oven and bake the rolls for 14 to 16 minutes or until they are lightly browned and crisp. Once done, remove the dish and let the rolls cool on a wire rack.
- Prepare the Syrup: While the rolls are baking, combine the honey, sugar, water, and lemon juice in a small saucepan. Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and simmer for 5 minutes. Remove from heat and allow the syrup to cool for 10 minutes.
