Meat Sauce

  • 1/2 large white onion, diced

  • 2 (24 oz.) jars red marinara sauce, or homemade

Pasta

  • 2030 oz. cheese ravioli, cooked and cooled
  • 12 Tbsp. olive oil (for tossing ravioli)

Ricotta Mixture

  • 15 oz. ricotta cheese
  • 1 large egg
  • 1/4 cup fresh basil, chopped
  • 2 Tbsp. fresh parsley, chopped

Topping

  • 12 oz. fresh mozzarella cheese, shredded

Instructions

  1. Sauté the onions: Heat olive oil in a nonstick skillet over medium heat. Add the diced onion with a pinch of salt and pepper. Cook for approximately 5 minutes until fragrant and softened, stirring occasionally to prevent burning.
  2. Cook the meat: Add minced garlic to the onions and sauté for about 1 minute. Then add the ground turkey and Italian seasoning. Cook, stirring and breaking up the meat, until the turkey is no longer pink and cooked thoroughly.
  3. Add marinara sauce: Pour in one jar (~2 cups) of marinara sauce into the skillet with the turkey mixture. Stir well to combine. Remove from heat and set aside to keep warm.
  4. Prepare the ravioli: Cook the cheese ravioli according to package directions, usually 4-5 minutes in boiling water until tender. Drain and rinse under cold water to stop cooking. Toss the ravioli with 1 to 2 tablespoons olive oil to prevent sticking, then set aside.
  5. Mix ricotta filling: In a medium bowl, combine ricotta cheese, egg, chopped basil, and chopped parsley. Mix until smooth and evenly incorporated.
  6. Assemble the lasagna: Preheat the oven to 375°F (190°C). In a 9×13 inch baking dish, spread 1 cup of marinara sauce evenly on the bottom. Layer half of the ravioli over the sauce, then cover with the entire meat sauce. Add another layer of ravioli, then spread the ricotta mixture evenly over that. Place another layer of ravioli on top, followed by the remaining marinara sauce. Finally, sprinkle the shredded mozzarella cheese evenly over the top.
  7. Bake the lasagna: Cover the dish loosely with aluminum foil, avoiding contact with the cheese layer. Bake for 30 minutes with foil on. Then remove the foil and bake an additional 25 minutes until bubbly and heated through. Optionally, broil for 2-3 minutes at the end to brown the cheese to your preference.
