Chicken Marinade

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup Dijon mustard
  • 2 tablespoons maple syrup

  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Roasted Sweet Potatoes

  • 2 medium sweet potatoes, cubed
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes and chicken.
  2. Roast Sweet Potatoes: Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast them in the oven for 20-25 minutes until tender and slightly caramelized.
  3. Prepare Marinade: While the sweet potatoes roast, whisk together Dijon mustard, maple syrup, apple cider vinegar, remaining 1 tablespoon of olive oil, dried thyme, salt, and pepper in a bowl to create the marinade.
  4. Marinate Chicken: Add the chicken thighs to the marinade, making sure each piece is well coated evenly.
  5. Add Chicken to Oven: Once the sweet potatoes are almost done roasting, place the marinated chicken on the same baking sheet, spreading the pieces out evenly.
