Prosciutto Mixture

  • 8 oz. triple crème brie cheese wheel (chilled in freezer for 1520 minutes)
  • 8.5 oz. jar fig jam

Instructions

  1. Preheat and Crisp Prosciutto: Preheat your oven to 400°F. Line a baking sheet with parchment paper and arrange the prosciutto in small nests. Bake for 10-12 minutes until the prosciutto becomes crispy. Remove from oven and allow to cool.
  2. Prepare Prosciutto Topping: Once cooled, chop the crispy prosciutto into small pieces. Toss the chopped prosciutto with fresh thyme and set aside for garnishing later.
  3. Lower Oven Temperature: Reduce the oven setting to 325°F to prepare for baking the brie-filled phyllo shells.
  4. Slice Brie Cheese: Remove the chilled triple crème brie from the freezer and slice into bite-sized cubes, which is easier due to chilling.
  5. Fill Phyllo Shells: Line another baking sheet with parchment paper and arrange the phyllo shells evenly. Into each shell, place approximately 1 teaspoon of fig jam, followed by a cube of brie cheese on top.
  6. Bake Brie Bites: Bake the assembled phyllo shells at 325°F for 6-8 minutes, or until the brie cheese is melted and gooey.
