Ingredients

Scale

Vegetables

  • 1 small head green cabbage, coarsely chopped
  • 1 medium Vidalia onion, chopped

Dairy & Butter

  • 8 tablespoons butter
  • 3 tablespoons melted butter
  • 1 cup shredded sharp cheddar cheese

Canned & Condiments

  • 1 (10-ounce) can condensed cream of chicken or cream of mushroom soup
  • 1/3 cup mayonnaise

Other

  • 1 sleeve Ritz crackers (about 30), coarsely crushed
  • Salt and pepper, to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart casserole dish to prevent sticking.
  2. Cook Cabbage Mixture: Heat 8 tablespoons of butter in a large nonstick pan over medium heat. Add the coarsely chopped cabbage and chopped Vidalia onion. Cook for 8 to 10 minutes, stirring frequently, until the cabbage is partially softened. Season with salt and pepper to taste.
  3. Assemble the Base: Transfer the cooked cabbage and onion mixture into the prepared casserole dish, spreading it out evenly.
  4. Create Creamy Layer: In a small bowl, combine the condensed cream of chicken or mushroom soup and 1/3 cup mayonnaise. Stir well and spread this mixture evenly over the cabbage layer in the casserole dish.
  5. Add Topping: In another bowl, mix together the 3 tablespoons melted butter, shredded sharp cheddar cheese, and coarsely crushed Ritz crackers. Sprinkle this crunchy topping evenly over the creamy layer.
  6. Bake: Place the casserole in the preheated oven and bake for 30 minutes, or until the topping is nicely browned and crisp. Remove from oven and let cool slightly before serving.

Notes

  • For a vegetarian version, use cream of mushroom soup and ensure the mayonnaise is egg-free or substitute with a plant-based alternative.
  • Vidalia onions are preferred for their sweetness, but any mild onion will work.
  • Feel free to substitute Ritz crackers with breadcrumbs or crushed crackers of your choice.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
  • This casserole pairs well with roasted meats or can be served as a hearty side dish for potlucks and holiday meals.
