Instructions

  1. Boil the honey: In a medium non-stick saucepan, bring the honey to a boil over high heat. Use a candy thermometer to monitor the temperature and allow the honey to reach 120℃ (248℉), which is the soft crack stage necessary for candy making.
  2. Add peanut butter and vanilla: Remove the saucepan from heat once the honey hits the target temperature. Immediately add the peanut butter and vanilla extract to the hot honey. Stir vigorously using a silicone rubber spatula until the mixture is smooth and well combined. At this stage, you may also add extra nuts for added texture if desired.
  3. Pour into container: Transfer the candy mixture into a small plastic food container. Sprinkle crystal salt flakes evenly over the top for an optional salty contrast to the sweetness. Cover the container with a lid to prepare for cooling.
  4. Cool and refrigerate: Allow the mixture to cool to room temperature before placing it in the refrigerator. Chill for at least 2 to 3 hours to let the candy solidify and become firm enough to handle.
  5. Cut and serve: Once set, remove the candy from the container and cut it into bite-sized pieces. For a thinner candy variation, spread the mixture onto parchment paper before cooling and refrigerating. Store the finished candy in an airtight container to maintain freshness.
