Ingredients

Scale

Pizza Dough

  • 1 package refrigerated pizza dough (or homemade pizza dough)

Filling

  • 1 1/2 cups marinara sauce or pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices (or your choice of toppings such as sausage, mushrooms, bell peppers, olives)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Finishing

  • Olive oil for brushing (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the pot pies evenly.
  2. Prepare Ramekins: Lightly grease 4-6 small ramekins or oven-safe bowls depending on their size to prevent sticking and make removal easier.
  3. Roll Dough: Roll out the pizza dough on a lightly floured surface to about 1/8 inch thickness, ensuring it’s thin enough to bake through but sturdy enough to hold the fillings.
  4. Cut Dough: Cut the dough into circles or squares large enough to fit inside your ramekins with about a 1-inch overhang to seal the filling inside.
  5. Form Crust: Gently press each dough piece into the bottom and sides of the ramekins to create a crust base and walls.
  6. Add Sauce: Spoon approximately 2 tablespoons of marinara or pizza sauce into the bottom of each dough-lined ramekin.
  7. Layer Cheese: Sprinkle 2-3 tablespoons of shredded mozzarella cheese evenly over the sauce in each ramekin.
  8. Add Toppings: Place a few slices of pepperoni or your chosen toppings on top of the cheese layer.
  9. Season: Sprinkle grated Parmesan cheese along with dried oregano, basil, garlic powder, and optional red pepper flakes over the fillings for enhanced flavor.
  10. Top & Seal: Add a bit more mozzarella cheese on top, then fold the overhanging dough over the filling to partially cover it, creating a pot pie shape.
  11. Brush with Olive Oil: Brush the dough tops with olive oil for a golden, appetizing finish (this step is optional).
  12. Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes or until the dough is golden brown and the cheese is melted and bubbly.
  13. Cool & Serve: Allow the pot pies to cool for about 5 minutes before serving to let the filling set slightly and avoid burns.

Notes

  • You can customize the toppings based on your preferences—try sausage, mushrooms, bell peppers, olives, or spinach for variety.
  • If using homemade pizza dough, ensure it’s well chilled before rolling to make handling easier.
  • For a crispier crust, you can prebake the dough-lined ramekins for 5 minutes before adding the filling.
  • Brush extra olive oil or melted butter on the crust edges after baking to boost flavor.
  • Store any leftovers covered in the refrigerator and reheat in the oven for best texture.
