Ingredients

Scale

Potatoes

  • 3 large russet potatoes, peeled and cut into sticks

Breading

  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • ½ cup breadcrumbs (preferably panko for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Cheese

  • 1 cup shredded mozzarella cheese

Frying

  • Vegetable oil for frying (about 2 inches deep in pan)

Garnish (optional)

  • Fresh parsley, chopped

Instructions

  1. Prepare the Potatoes: Place the peeled and cut potato sticks in a pot of salted water. Bring to a boil and cook for about 5-7 minutes until slightly tender but still firm. Drain and let them cool completely to ensure they hold shape during frying.
  2. Set Up Breading Station: Arrange three separate bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Coat the Potato Sticks: Coat each potato stick first in flour, shaking off excess, then dip into beaten eggs, and finally thoroughly coat with the seasoned breadcrumb mixture, pressing gently to adhere. Repeat until all sticks are coated evenly.
  4. Stuff with Cheese: Create a small slit along the side of each coated stick and insert about 1 tablespoon of shredded mozzarella cheese. Seal the edges carefully to prevent cheese from leaking during frying.
  5. Fry the Cheese Sticks: Heat about 2 inches of vegetable oil in a deep skillet over medium-high heat. Test oil by dropping a breadcrumb to check for sizzling. Fry a few sticks at a time for 3-4 minutes on each side or until golden brown and crispy.
  6. Drain and Serve: Remove fried sticks with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  7. Serve Warm: Garnish with chopped fresh parsley if desired and serve warm with preferred dipping sauces such as ketchup, ranch, or garlic aioli.

Notes

  • Ensure potatoes are not overcooked during boiling to maintain their shape for frying.
  • Using panko breadcrumbs adds extra crunch to the coating.
  • Seal the cheese inside well to avoid leakage and greasy oil during frying.
  • Fry in batches to avoid overcrowding the pan and ensure even cooking.
  • Serve immediately for the best crispy texture.
