Delicious and easy-to-make Ranch Garlic Parmesan Chicken Skewers featuring tender chicken marinated in a flavorful blend of ranch dressing, garlic, parmesan, and herbs, grilled to perfection for a savory and satisfying meal.

Ingredients

Scale

For the Marinade:

  • ½ cup ranch dressing (store-bought or homemade)
  • ¼ cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley (or fresh parsley, chopped)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice (optional for extra tang)

For the Skewers:

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Wooden or metal skewers (wooden soaked for 15 minutes if using)

Instructions

  1. Prepare the Marinade: In a bowl, mix together the ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and optional lemon juice until well combined to create a flavorful marinade.
  2. Marinate the Chicken: Place the cubed chicken into a resealable plastic bag or shallow dish, pour the marinade over the chicken ensuring all pieces are coated evenly. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours for deeper flavor infusion.
  3. Prepare the Skewers: Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece to allow even cooking. If using wooden skewers, soak them in water for 15 minutes before threading to prevent burning on the grill.
  4. Grill the Skewers: Preheat the grill to medium-high heat, place the skewers on the grill, and cook for 10-15 minutes, turning occasionally until the chicken is fully cooked (internal temperature 165°F/75°C) and has a nice char.
  5. Serve and Garnish: Remove the skewers from the grill and let them rest a few minutes. Garnish with extra chopped parsley or parmesan cheese if desired. Serve with your favorite sides or dipping sauces such as ranch, BBQ, or tangy yogurt dip.

Notes

  • Marinate chicken for at least 30 minutes but no more than 2 hours to avoid overly soft texture.
  • Use metal skewers for easier grilling and no soaking, wooden skewers should be soaked to prevent burning.
  • Ensure chicken pieces are evenly sized for uniform cooking.
  • Check internal temperature with a meat thermometer to ensure safety.
  • Optional lemon juice adds brightness but can be omitted if preferred.
