Instructions

  1. Prepare Baking Sheet: Line a large baking sheet with parchment paper or wax paper to prevent sticking and make cleanup easier.
  2. Make Sandwiches: Arrange 24 crackers on the baking sheet, spacing them slightly apart. Spoon about 1/2 tablespoon of creamy peanut butter onto the center of each cracker. Gently press another cracker on top of the peanut butter to form sandwich cookies. Repeat this to assemble all 48 crackers into 24 sandwiches.
  3. Melt Chocolate: Place the chocolate chips and coconut oil (if using) in a large microwave-safe bowl. Microwave in 30-second bursts, stirring between each, until the chocolate is just melted and smooth. Avoid overheating to prevent the chocolate from becoming grainy. Alternatively, melt the chocolate using a double boiler.
  4. Dip Cookies: Drop a sandwich cookie into the melted chocolate. Use two forks to move it around until fully coated. Lift it out with one fork and gently tap it on the side of the bowl to remove excess chocolate.
  5. Decorate and Set: Transfer the coated cookie to the lined baking sheet. While the chocolate is still wet, sprinkle with flaky sea salt and/or sprinkles if desired. Repeat the dipping and decorating process with the remaining cookies.
  6. Harden Chocolate: Allow the chocolate to set at room temperature until firm. To speed up the process, place the baking sheet in the refrigerator for about 10-15 minutes or until the chocolate hardens completely.
