Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, dried thyme, paprika, salt, and pepper until they are evenly coated with the seasoning.
  3. Roast Potatoes: Spread the seasoned potatoes in a single layer on the prepared baking sheet, then place in the oven and roast for about 15 minutes until they begin to soften.
  4. Season Salmon: While the potatoes roast, season the salmon fillets on both sides with salt and pepper to taste.
  5. Add Salmon and Vegetables: Remove the baking sheet from the oven, push the partially cooked potatoes to one side, and arrange the salmon fillets on the other side. Scatter the trimmed green beans around the salmon and potatoes and place lemon slices on top of the salmon fillets.
