Ingredients

Scale

Cheese

  • 1 13.2 oz brie round

Berry Topping

  • 1 tablespoon brown sugar
  • 6 ounces blackberries
  • 6 ounces blueberries
  • 3 tablespoons coconut oil
  • 1 teaspoon fresh rosemary (finely chopped)
  • Extra rosemary for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the brie and berry mixture.
  2. Prepare the Baking Dish: Line a baking dish with parchment paper and place the whole brie round on top. Ensure not to cut the top off the brie so it retains its shape while baking. Set aside the baking dish with the brie.
  3. Mix the Berries: In a small baking dish or pie dish, combine blackberries and blueberries. Sprinkle the berries with 1 tablespoon of brown sugar and drizzle with 3 tablespoons of coconut oil. Add 1 teaspoon of finely chopped fresh rosemary and gently mix to evenly coat the berries with sugar, oil, and rosemary.
  4. Bake Brie and Berries: Place both baking dishes—the one with the brie and the one with the berry mixture—into the preheated oven. Bake for 15-20 minutes, until the brie is soft and melty, and the berries are cooked through.
  5. Assemble and Garnish: Remove the dishes from the oven. Carefully transfer the baked brie to a serving plate. Spoon the warm berry mixture over the brie and garnish with extra fresh rosemary sprigs.
  6. Serve: Serve the baked brie immediately with accompaniments like crackers, sliced apples, fresh warm bread, or banana chips for a delicious appetizer experience.

Notes

  • Do not cut the brie before baking to allow it to hold its shape and melt perfectly inside.
  • Use fresh rosemary for the best flavor, both in the berry mixture and as a garnish.
  • Serve immediately after baking for optimal gooey texture and flavor.
  • Substitutions: You can use other types of berries such as raspberries or strawberries if desired.
  • This dish pairs wonderfully with slightly sweet or nutty crackers and crisp fresh fruit.
