This smoky chilli sauce is a vibrant and flavorful condiment made by roasting red chillies and garlic to develop deep smoky notes, then blending with olive oil and a touch of sugar for balance. Perfect as a spicy accompaniment to grilled meats, roasted vegetables, or as a fiery dip, it brings a delicious heat with a subtle sweetness.

  • 12 red chillies, stems removed
  • 10 garlic cloves
  • 1 tbsp olive oil, plus extra for drizzling
  • Pinch of caster sugar
  • Salt, to taste

Instructions

  1. Prepare the chillies and garlic: Remove the stems from the red chillies and place them on a large sheet of foil along with the garlic cloves. Drizzle with olive oil, sprinkle with a pinch of caster sugar and some salt.
  2. Seal the foil packet: Lift the sides of the foil and scrunch together to form a sealed packet that will trap the steam and flavors during cooking.
  3. Cook the chillies and garlic: Grill the foil packet on a barbecue or roast in a preheated oven at 160°C (140°C fan)/gas mark 3 for 30 minutes until the garlic is soft and the chillies are roasted and smoky.
  4. Blend the sauce: Transfer the roasted chillies and garlic to a large pestle and mortar or food processor. Add 1 tablespoon of olive oil and crush or blitz the ingredients to a chunky sauce consistency.
  5. Store and serve: Transfer the smoky chilli sauce to a jar and refrigerate. It will keep for up to two days. Use as a spicy condiment with grilled dishes, roasted vegetables, or in sandwiches.

Notes

  • If you prefer less heat, remove the seeds from the chillies before roasting.
  • You can roast the sauce in the oven if a barbecue is not available.
  • The sauce can be adjusted in texture to your liking by processing longer for smoothness or briefly for chunkier bits.
  • Use fresh chillies for the best flavor; dried chillies will change the taste and texture.
  • Wear gloves while handling chillies to avoid irritation.
