Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1 cup full-fat cottage cheese

Vegetables & Add-ins

  • 1 1/2 cups fresh spinach (or 3/4 cup frozen, thawed and drained)
  • 1/4 cup chopped scallions or onions (optional)

Seasonings & Optional Ingredients

  • Salt and pepper to taste
  • Olive oil or butter for greasing pan
  • Optional: chopped herbs, mushrooms, red pepper flakes

Instructions

  1. Preheat & Prepare: Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish with olive oil or butter to prevent sticking.
  2. Mix Eggs and Cottage Cheese: In a large mixing bowl, whisk together the 6 large eggs and 1 cup of full-fat cottage cheese until the mixture is smooth and fully combined.
  3. Add Vegetables & Seasoning: Gently fold in 1 1/2 cups of fresh spinach (or thawed and drained frozen spinach), the optional 1/4 cup chopped scallions or onions if using, and season the mixture with salt and pepper to taste.
  4. Transfer to Baking Dish: Pour the mixture evenly into the prepared baking dish, spreading it out to ensure it bakes uniformly.
  5. Bake: Place the baking dish in the oven and bake for 30 to 35 minutes. The bake is ready when the center is set and the edges turn lightly golden.
  6. Cool & Serve: Remove from the oven and let the bake cool for about 10 minutes before slicing. Serve warm and enjoy!

Notes

  • You can use frozen spinach if fresh is unavailable; just ensure it’s fully thawed and drained to avoid excess moisture.
  • Optional additions like chopped herbs (parsley, dill), mushrooms, or red pepper flakes add flavor and texture.
  • This bake can be made ahead and refrigerated for up to 3 days or frozen for up to 1 month.
  • Use a non-stick spray or butter to grease the baking dish to ensure easy removal.
  • Adjust seasoning according to your taste preferences; adding garlic powder or smoked paprika can enhance flavor.
