  • 400g Greek yogurt
  • 4 spring onions, finely sliced
  • 1 tbsp dill, chopped
  • 1 tbsp mint, chopped

  • Extra-virgin olive oil, for drizzling

Instructions

  1. Drain the yogurt: Tip the Greek yogurt into a fine sieve set over a bowl and place it in the fridge for 1 hour to allow excess liquid to drain off. This step thickens the yogurt for a creamy, dip-like texture. Discard the liquid that has drained off.
  2. Mix the ingredients: Scrape the thickened yogurt into a mixing bowl. Stir in the finely sliced spring onions and most of the chopped dill and mint, reserving a little of the herbs for garnish.
  3. Serve: When ready to serve, drizzle the dip with extra-virgin olive oil and sprinkle the remaining herbs over the top along with a little black pepper to taste. Serve chilled or at room temperature.
