Ingredients

Scale

Brownie Layer

  • 1 box Brownie Mix (your favorite store-bought or homemade)
  • 1/2 cup Butter (unsalted, for moisture and richness)
  • 2 large Eggs (room temperature for best results)

Cookie Layer

  • 1/2 cup Butter (softened, unsalted for best flavor)
  • 1/2 cup Brown Sugar (can substitute with granulated sugar)
  • 1/4 cup Granulated Sugar (for added sweetness)
  • 1 teaspoon Vanilla Extract (pure vanilla recommended)
  • 1 1/2 cups All-Purpose Flour (can use gluten-free if needed)
  • 1 teaspoon Baking Powder (essential for a fluffy cookie layer)
  • 1 teaspoon Food Coloring (pink) (optional, for festive color)

Instructions

  1. Preparation: Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper to prevent sticking.
  2. Prepare Doughs: In one bowl, prepare the brownie batter according to the package instructions or your homemade brownie recipe. In a separate mixing bowl, cream together the softened butter with brown sugar and granulated sugar until light and fluffy. Then, beat in the eggs one at a time followed by the vanilla extract. Gradually mix in the all-purpose flour and baking powder until just combined. If desired, mix in the pink food coloring to create a festive cookie dough.
  3. Combine: Spoon the brownie batter and cookie dough alternately into the prepared baking pan. Use a knife or skewer to gently swirl the two batters together, creating a marbled effect without fully combining them.
  4. Bake: Place the pan in the preheated oven and bake for 25-30 minutes. Check for doneness by inserting a toothpick into the center; it should come out with moist crumbs but no raw batter.
  5. Cool and Slice: Remove the brookies from the oven and let them cool briefly in the pan. Once slightly cooled, lift them out using the parchment paper and slice into squares. Serve warm or at room temperature.

Notes

  • Room temperature eggs help create a smoother batter.
  • Using parchment paper makes removal and slicing easier.
  • Food coloring is optional and can be omitted or substituted for different colors.
  • For gluten-free options, substitute all-purpose flour with a gluten-free flour blend.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
