Instructions

  1. Cook the bacon: Prepare the bacon by cooking it in the oven, air fryer, or on the stove top until crispy. Once done, set aside.
  2. Cook the eggs: Heat a frying pan over medium heat and add butter or oil. Break the eggs into the pan without crowding; you may need multiple batches. Gently break the yolks with a fork and lightly scramble while keeping them in place. When the whites are set, flip the eggs over and cook until yolks are fully cooked through. Remove eggs and keep the pan on medium heat.
  3. Assemble the wraps: Lay out the tortillas flat. On one half of each tortilla, place one cooked egg, one piece of bacon, and one slice of cheese.
  4. Fold the tortillas: Fold each tortilla in half like a quesadilla, enclosing the fillings inside.
  5. Cook the wraps: Place the folded wraps back into the hot pan. Cook for 1-2 minutes on each side, until the cheese is melted and the tortilla is golden brown and crispy.
